2 (11-oz) boxes frozen ripe plantains, thawed
4 oz Colby Jack cheese
1 frozen prepared pie crust
1/3 cup mango jam
Prep
- Preheat oven to 425°F.
- Thaw plantains or microwave on HIGH for 20–30 seconds to soften; cut into bite-size pieces.
- Shred cheese (1 cup).
- Place crust on baking sheet (for ease in handling); bake 8–10 minutes or until lightly browned.
- Spread plantains evenly over pie crust. Microwave jam on HIGH for 30 seconds or until melted; pour over plantains. Top with cheese; bake 10–15 minutes or until cheese melts and pie is thoroughly heated. Serve warm. (Makes 8 servings.)
