Black Bean Sauté

Ingredients vegetable cooking spray
one 14 1/2-ounce can seasoned black beans
1/4 cup picante sauce
1/4 cup Veggie Shreds

Steps
1. Preheat sauté pan on medium-low for 1-2 minutes.
2. Spray pan with vegetable cooking spray.
3. Drain beans; add beans to sauté pan. Using potato masher, mash beans until a slightly lumpy paste has formed.
4. Add picante sauce and stir to mix. Cook for 2-3 minutes.
5. Top with veggie shreds; cover. Allow cheese to melt for 1-2 minutes.  

Red Beans And Rice

Ingredients 2 tablespoons olive oil
1 cup frozen diced onions
1/2 cup frozen diced green pepper
2 teaspoons garlic
Ingredients
2 tablespoons olive oil
1 cup frozen diced onions
1/2 cup frozen diced green pepper
2 teaspoons garlic granules
two 15 1/2-ounce cans red kidney beans (light or dark), undrained
2 1/4 cups water
2 teaspoons oregano
2 tablespoons cider vinegar
2 packets (10 grams) Goya Sazon Seasoning
2 cups 10-minute brown rice

Steps 1. Preheat sauté pan on medium for 2-3 minutes. Add oil and swirl to coat.
2. Add onion, pepper and garlic; sauté for 3-4 minutes or until tender.
3. While sautéing vegetables, heat 1 1/4 cups of the water on high in covered saucepan. Bring to a boil.
4. In sauté pan stir in kidney beans, remaining cup of water, oregano, vinegar and Goya seasoning; bring to a boil, reduce heat to medium and simmer for 10 minutes or until rice has cooked.
5. Check water in saucepan. When boiling, add rice, stir, cover and reduce heat to medium-low for 10 minutes. Serve beans over rice.

Quick Red Beans and Rice

Ingredients
1 (15.5-ounce) can red beans (drained)
2 cups instant rice
1 cup roasted garlic chicken broth
1 teaspoon vegetable seasoning blend

Steps
1. Combine all ingredients in microwave-safe bowl. Cover and microwave on HIGH 5 minutes.
2. Let stand 5 or more minutes or until most of liquid is absorbed. Stir and serve.

Dirty Rice and Beans

Ingredients
1 (10-ounce) bag frozen seasoning blend (contains diced onions, green/red peppers, celery and parsley)
2 Cajun pork sausage links
1 tablespoon roasted garlic
2 cups water
2 teaspoons vegetable seasoning blend
1 teaspoon ham base
3 tablespoons diced pimientos (undrained)
1 (16-ounce) can red beans (drained)
1 teaspoon browning sauce
2 cups instant rice

Steps
1. Preheat large saucepan on medium-high 2–3 minutes. Place seasoning blend in microwave-safe bowl and microwave on HIGH 3 minutes to defrost.
2. Remove casing from sausage. To do this, cut off one end of casing and squeeze contents into saucepan. Slide casing through fingers to remove entire contents. Wash hands.
3. Add garlic. Drain seasoning blend and stir into meat mixture. Cook 5–7 minutes until meat is brown and no pink remains. Stir frequently and break up meat as it cooks.
4. Stir in remaining ingredients except rice; cover, increase heat to high and bring to boil.
5. Stir rice into boiling mixture; cover, reduce heat to low and simmer 7–8 minutes until liquid is absorbed. Serve.

Bacon-Wrapped Beef Rolls Over Beans

Ingredients
3 tablespoons fresh cilantro, coarsely chopped
1 medium onion
1 (8.8-oz) pouch pre-cooked white rice
1 (15-oz) can pink beans in sauce
4 sirloin tip sandwich steaks (3/4 lb)
1 tablespoon zesty garlic and herb seasoning
4 slices bacon


Prep
  • Preheat oven to 425°F.
  • Chop cilantro.
  • Cut 1/4 of the onion into strips; chop remaining onion coarsely.
Steps
  1. Place rice in 9-inch-square baking dish. Stir in pink beans (with sauce) and chopped onions.
  2. Arrange steaks on cutting board; sprinkle with garlic herb seasoning. Place 1/4 of the onion strips and 1 teaspoon cilantro on each steak. Roll steak around onions; wrap each steak with a slice of bacon.
  3. Place steak rolls on top of rice and beans; bake 25–30 minutes or until bacon is crisp. Sprinkle with remaining cilantro and serve.
