Cheeseburger Frittata

Ingredients
garlic cooking spray
2 (9.5-ounce) boxes frozen mini hamburgers
1/4 cup cooked crumbled bacon
2 cups shredded Cheddar cheese, divided
6 eggs
3 tablespoons chopped green chiles (undrained)
1/2 cup reduced fat milk
1/4 teaspoon black pepper
1 teaspoon seasoned salt


Steps
1. Preheat oven to 400°F.
2. Spray 9x13-inch microwave-safe baking dish with cooking spray.
3. Remove tops of hamburger rolls and set aside. Place bottom half, with burger patties, in bottom of baking dish.
4. Sprinkle bacon and 1 cup cheese over burgers. Break top of rolls into bite-size pieces and place on top of cheese, pressing down firmly.
5. Break eggs into medium mixing bowl. Add chilies, milk, pepper and seasoned salt. Whisk ingredients until fully mixed.
6. Pour egg mixture over top of rolls, making sure burgers are completely covered.
7. Sprinkle with remaining cheese and microwave on high 5 minutes.
8. Bake 20 minutes. Remove from oven and let stand 5 minutes. Serve.

Weeknight Italian Beef

Ingredients
2 tablespoons extra-virgin olive oil
1 cup pre-diced onions
1 (17-oz) fully cooked beef pot roast
1 1/2 cups tomato basil pasta sauce
1 cup fried peppers and onions
1 cup mild pepper rings
2 tablespoons garlic powder
2 teaspoons Italian seasoning
6 Bakery French (or regular) Hamburger Buns


Steps
  1. Preheat large saucepan on medium-high 2–3 minutes. Place oil in pan, then add onions; cook and stir 4–5 minutes or until onions begin to brown.
  2. Stir in remaining ingredients (except buns) and cover; bring to a boil. Reduce heat to medium; cook and stir 15–20 minutes or until hot, breaking meat up as it cooks.
  3. Serve on Bakery buns.

Ultimate Meatball Hoagies

Ingredients
24 slices turkey pepperoni, halved
1 (20-oz) package cooked meatballs with sauce
1/2 cup fried peppers and onions
1/4 cup sliced black olives
2 tablespoons basil pesto
4 Bakery hoagie rolls
2 tablespoons garlic herb butter
1 cup shredded mozzarella cheese, divided

Prep
  • Preheat oven to 425°F.
  • Let butter stand to soften.
  • Slice pepperoni (about 1/2 cup).
Steps
  1. Heat meatballs in microwave following package instructions.
  2. Combine peppers and onions, olives, pesto, and pepperoni. Cut rolls open lengthwise; spread butter over inside of rolls.
  3. Cut meatballs in half. Place meatballs and sauce in each roll; top with pepper mixture and then cheese. Place hoagies on baking sheet; bake 6–7 minutes to melt cheese and toast bread. Serve.

Super Duper Cheeseburgers

Ingredients
1 1/2 lbs lean ground beef, 7% fat
1 cup frozen pre-diced onions
1/4 teaspoon salt
1/8 teaspoon pepper
6 Bakery hamburger buns (regular or French)
1 (8-ounce) jar processed cheese sauce (1 cup)
pickle spears or slices

Steps
1. Preheat large sauté pan on medium-high 2–3 minutes.
2. Place ground beef, onions, salt, and pepper in pan (wash hands). Cook 5–7 minutes, stirring to crumble meat, or until beef is brown and no pink remains. Meanwhile, slice buns in half, if needed.
3. Drain ground beef and return to pan. Stir in cheese sauce; cook 2–3 minutes, stirring occasionally, or until thoroughly heated. Serve on hamburger buns with pickles on the side.

Grilled Cheese Sandwiches

Ingredients
8 slices country potato bread
4 slices provolone cheese
4 slices Swiss cheese
butter-flavored vegetable cooking spray
1/2 teaspoon Montreal Steak Seasoning

Steps
1. Preheat 2-sided tabletop grill.*
2. Lay out 4 slices of bread. Add 1 slice provolone and 1 slice Swiss to each bread slice.
3. Top each piece of bread with remaining bread slices. Spray tops of sandwiches with cooking spray.
4. Add sandwiches to grill, butter-side down.
5. Spray top of sandwiches with cooking spray and sprinkle with steak seasoning. Close lid over top of sandwiches and grill for 4 minutes. Serve.
*If grill is not available, sandwiches may be baked in oven at 400°F for 15 minutes. Turn once, halfway through cooking time.

Spanish-Style Hamburgers

Ingredients
1 very well-ripened plantain
4 oz fresh chorizo (about 1/2 link)
2 tablespoons minced garlic, divided
1 lb lean ground beef, 7% fat
1 egg (or 1/4 cup egg substitute)
1/2 cup fresh pre-diced onions
1 tablespoon + 1/4 teaspoon Complete seasoning (divided)
1/4 teaspoon pepper
1/2 cup light mayonnaise
6 Bakery hamburger buns
1/2 cup canned potato sticks

Prep
  • Peel plantain and chop finely.
  • Chop chorizo finely.


Steps
  1. Combine plantains, chorizo, 1 tablespoon garlic, beef, egg, onions, 1 tablespoon Complete seasoning, and pepper until blended; shape into six patties about 1/2-inch-thick (wash hands).
  2. Preheat large sauté pan on medium-high 2–3 minutes. Place burgers in pan; cook 5–7 minutes on each side or until 160°F.
  3. Combine 1 tablespoon garlic, 1/4 teaspoon Complete seasoning, and mayonnaise; spread over inside of buns. Add burgers and top with potato sticks. Serve. (Makes 6 servings.)

Southwest Green Chile Burgers

Ingredients
1 1/2 lb ground chuck beef
1/2 teaspoon kosher salt
1/4 teaspoon pepper
4 teaspoons canned chopped green chiles, drained
4 slices havarti cheese (about 3 oz)
1 (4.2-oz) Southwest ranch salad kit
1 (8-oz) bag shredded lettuce
4 potato hamburger buns

Prep
  • Preheat grill pan on medium-high (or preheat grill).
  • Divide meat and form into 4 patties (wash hands).


Steps
  1. Season meat with salt and pepper. Place in grill pan (or on grill); grill 3–4 minutes on each side or until 160°F. During last minute of cook time, top each patty with 1 teaspoon chiles and 1 cheese slice.
  2. Combine salad dressing and chips (from salad kit) with lettuce shreds. Place patties on bottom halves of buns. Top burgers with lettuce mixture and top halves of buns. Serve.

Smoky Garlic Cheeseburgers

Ingredients
1 egg
1 1/2 tablespoons dry mesquite marinade mix (1/2 packet)
1 tablespoon roasted garlic
1 1/2 pounds lean ground beef, 7% fat
1/4 cup bread crumbs
4 (1-ounce) thick American cheese slices
4 Bakery Kaiser rolls
4 teaspoons ketchup
4 teaspoons mayonnaise
4 slices pre-sliced onion
4 leaves green leaf lettuce


Steps
1. Preheat grill on medium-high. Combine egg, dry marinade mix and garlic in medium bowl. Add ground beef and bread crumbs; gently fold together. Do not over-mix. Form mixture into four 1/2-inch thick patties. Wash hands.
2. Place burgers on grill and close lid (or cover with foil). Grill 5–6 minutes on each side or until internal temperature reaches 165°F. Use a meat thermometer to accurately ensure doneness. (Grills vary widely; adjust time as needed.) Top each burger with one cheese slice and grill 2 more minutes.
3. Slice rolls in half and spread with ketchup and mayonnaise. Top with burgers, onions and lettuce; assemble and serve.

Saucy 'Shroom Onion Cheeseburgers

Ingredients
1 tablespoon butter
5 oz sliced onions (1 cup)
4 oz sliced baby portabellas
2 tablespoons steak sauce
4 (6-oz) ground beef chuck patties
6 slices American cheese
1/2 cup ranch salad dressing
3/4 teaspoon Dijon mustard
4 Bakery hamburger buns

Prep
  • Preheat gril pan on medium-high (or preheat grill).
Steps
  1. Preheat large sauté pan on medium-high 2–3 minutes. Place butter in pan, then add onions, mushrooms, and steak sauce; cook and stir 4–5 minutes or until softened and browned. Remove from heat; set aside.
  2. Place burgers in grill pan (or on grill); grill 3–5 minutes on each side or until 155°F (for medium).
  3. Place cheese slices, ranch dressing, and mustard in microwave-safe bowl. Microwave on HIGH 60–90 seconds, stirring twice, or until cheese melts and sauce can be blended. Place burgers on buns; top with onion mixture and cheese sauce. Assemble and serve.

Roadhouse Burger

Ingredients
4 ounces pre-sliced baby portabella mushrooms (rinsed)
¼ cup pre-sliced green onions
1 tablespoon roasted garlic
1 medium tomato (rinsed)
1 ½ teaspoons seasoned pepper blend
4 (6-ounce) ground chuck patties
4 thin American cheese slices
4 wheat sandwich rolls
4 dill pickle slices
¼ cup barbecue sauce
2 tablespoons mayonnaise

Steps
  1. Preheat grill on medium-high. Combine mushrooms, green onions, and roasted garlic in microwave-safe bowl. Microwave on HIGH 1–2 minutes or until mushrooms are tender; set aside. Cut tomato into thin slices to top burgers (add any extra tomato to salad); set aside.
  2. Sprinkle seasoned pepper over both sides of patties; place on grill. Wash hands. Close lid (or cover with foil); grill 4–5 minutes on each side or until internal temperature reaches 155°F (for medium). During last 1–2 minutes of grill time, top each patty with ¼ mushroom mixture and 1 cheese slice. Use meat thermometer to accurately ensure doneness. (Grills vary widely; adjust time as needed.)
  3. Place patties on bottom halves of rolls; top with pickles and tomato slices. Spread barbecue sauce and mayonnaise over top halves of rolls. Assemble and serve.

Reuben Sandwiches

Ingredients
1 cup sauerkraut
2 tablespoons thousand island salad dressing (from Produce)
8 slices Bakery marble rye bread
8 slices Swiss cheese (6 ounces)
12 slices corned beef (12 ounces)
butter cooking spray

Steps
1. Preheat 2-sided tabletop grill. Place sauerkraut in colander and press firmly to drain excess liquid. Place in small bowl and stir in salad dressing.
2. Assemble each sandwich in this order: bread, 1 cheese slice, 1/4 cup of the sauerkraut mixture, 3 corned beef slices, 1 cheese slice, and then bread.
3. Place all 4 sandwiches on a microwave-safe plate; microwave on HIGH 1 minute or until warm.
4. Coat top and bottom of grill with cooking spray. Place sandwiches on grill and close lid. Grill 4–5 minutes or until thoroughly heated and golden. Serve
