Ingredients
cooking spray
1 cup water
1 cup instant rice
1 cup shredded lettuce
8 frozen beef and cheese taquitos
1 (10-ounce) can mild enchilada sauce
1 cup shredded Mexican-blend cheese
Steps
1. Coat 8-inch square microwave-safe dish with cooking spray. Add water; microwave on HIGH 2–3 minutes or until boiling. Stir rice into boiling water.
2. Sprinkle with lettuce. Arrange taquitos over lettuce. Pour enchilada sauce over taquitos, covering completely.
3. Sprinkle with cheese and microwave on HIGH 10 minutes or until thoroughly heated. Serve with your favorite toppings.
