Ingredients
1 pound lean ground beef, 7% fat
2 tablespoons water
1 (1-ounce) packet taco seasoning mix
cooking spray
5 (10-inch) flour tortillas
3/4 cup shredded Mexican cheese blend, divided
1 cup refried beans with green chiles
1 1/2 cups shredded lettuce
3/4 cup mild salsa, divided
1/2 cup sour cream
1/4 cup sliced black olives (drained)
additional olives, sour cream and lettuce for garnish
Steps
1. Preheat large sauté pan on medium-high 2–3 minutes. Place beef in pan (wash hands); brown 5–7 minutes until beef is brown and no pink remains. Stir frequently and break beef up as it cooks.
2. Drain meat and return to pan. Stir in water and seasoning mix; cook 1–2 minutes or until hot.
3. Coat 2-quart round microwave-safe baking dish with cooking spray. Build layers in this order. 1st tortilla: (edges of tortilla may come up side of dish) beef and 2 tablespoons cheese. 2nd tortilla: refried beans and 2 tablespoons cheese. 3rd tortilla: lettuce, 1/2 salsa and 2 tablespoons cheese. 4th tortilla: sour cream, olives and 2 tablespoons cheese. 5th tortilla: (press layers down firmly to settle layers together) then top with remaining 1/2 salsa and 1/4 cup cheese.
4. Microwave on HIGH 5 minutes. Turn 1/4 turn and microwave 5 more minutes to heat thoroughly. Let stand 5 minutes. Slice into wedges, garnish with additional olives, sour cream, and lettuce, if desired, and serve. (Makes 6 servings.)
