Mom's Meatloaf

Ingredients
cooking spray
20 reduced-fat buttery-taste crackers
large zip-top bag
1 pound lean ground beef, 7% fat
1 cup frozen seasoning blend (onions, bell peppers, and celery)
1/2 cup reduced-fat milk
2 eggs
1 teaspoon meat seasoning
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 cup ketchup
1/4 cup maple syrup

Steps
1. Preheat oven to 375°F. Coat 9- x 4-inch loaf pan with cooking spray.
2. Place crackers in zip-top bag and crush finely. Combine all ingredients (except ketchup and syrup) in medium bowl, mixing just until combined (do not over-mix). Place in pan and shape into a loaf. Wash hands. Bake 40–45 minutes or until internal temperature reaches 165°F or higher. Use a meat thermometer to accurately ensure doneness.
3. Combine ketchup and syrup in small bowl. Five minutes before bake time is complete, pour over meatloaf; complete bake time. Let stand 5 minutes before serving.
